Kale is a recent discovery for me. I learned about it while testing a Kale & Cranberry Salad (which is to die for, by the way). So I decided to do a bit of light reading on this ‘superfood.’
What I found out is pretty amazing:
Kale stands out as one of the best ‘greens’ that you can ingest. Nutritionists tout it as one of the best sources of beta-carotene… and also credit it a major player in the battle against cancer, heart disease and certain age-related chronic diseases.
Kale is an incredible source of well-absorbed calcium, and provides a healthy dose of vitamin c, folic acid, vitamin B-6, and potassium.
How awesome is that!
